The colours of autumn are constantly changing, from plump red fruits to golden leaves. Throughout the season, land and sea produce a bountiful harvest of wonderful produce.

GIADA Garden has drawn on the flavours of the season to produce a selection of new dishes that take you on a journey through Italy in autumn, travelling from coast to mountains and back.
ANGUILLA
Smoked Eel Terrine, Cabbage & Pepper Drops
煙薰鰻魚,南瓜,甘藍葉,甜椒
從前菜开始,足夠的驚豔才能安撫住秋日叫囂的味蕾。經過煙薰後的鰻魚香氣十足,鮮味隱隱相佐,譜寫一場唯美的巧遇。
The taste of autumn is infused with every dish on the menu, starting from the appetisers. Here, eel is served in the form of terrine, it’s subtle umami flavour is the perfect pairing for seasonal cabbage and pepper drops.

Barley, Scampi, Guanciale & Celery Root
大麥,海鰲蝦,根芹,煙薰豬臉肉
金黃的海鰲蝦球,濃縮出濃鬱的鮮甜,借一點大麥香氣、煙薰豬臉肉的華麗香氣,復合的味覺交錯在舌尖,直入味蕾的十足飽腹感,便是喫了會上癮的滋味。
This dish combines the flavours of land and sea, with plump, sweet langoustines served on a bed of tender barley infused with salty smoked pork cheek.

手工意餃似秋日的暖陽加身,溫暖而令人滿足。慢燉牛尾軟嫩豐腴,與奶香十足的乳清芝士相互提升映襯,是意大利最地道的經典組合。紅菜頭的加入讓一口看似日常的滋味,也有了新的靈魂,融合得恰到好處。
Homemade ravioli stuffed with a rich combination of slow-braised oxtail and milky ricotta cheese, which is the perfect pasta for autumn. Beetroot adds a fun, colourful twist to the dish.

For meat lovers, it doesn’t get better than grilled lamb chops. The lamb chops are seasoned with a special blend of herbs and spices, before the charcoal grill locks in all the flavour and juices.
